Poolside snacks are a must...

I love to entertain at home. I keep it relaxed however, I love to treat my friends and family. I had one of my dearest friends over for some pool time in the sun. I wanted to serve something light...but I also wanted it to count as lunch. So I made some 'Greek Nachos' I made a simple garlic hummus. I added diced cucumber, broccoli florets, kalamata olives, sliced grape tomatoes, crumbled feta, and some fresh herbs. I made some pita chips real quick by slicing pita bread in triangles and smothering them in some good olive oil and seasoned them well with some fine Himalayan garlic salt and fresh cracked pepper. I toasted them in the oven until golden brown and crisp. I assembled the platter and drizzled the hummus with a well of olive oil and smoked paprika in the center. I made an antipasto platter of fresh mozz / roasted peppers with balsamic syrup and fresh basil / some roasted almonds / sliced mild sausages / quickly marinated mushrooms and artichoke hearts. We enjoyed everything with chilled mimosas and watched the kids splash around.
